Assist hatching should be a last resort most of the time. Chicks can easily get killed by people opening their eggs before they has absorbed their yolk sac.

1 move the waterer onto something like a short bowl or brick to raise it up
2 move a dog bowl of water they can swim in
3 put them in the bath with shallow water and watch them swim around

Be sure to have a backup plan the broody hens don’t always take the chicks (mine didn’t) that also may be because she already had one if she takes them she will make sure they eat and drink and get down the ramp just keep a close eye on them to make sure
I would say you’d want at least a half a foot preferably a full foot above it’s head so maybe make the roof 3 ft at least 2 1/2 feet away from the perch
