Definitely use 1/2". I only use 1/4" on button quail and for coturnix up to 2 weeks old. After that, their poops are too big.

I only have the jumbos and they are all dark meat. I think it depends on the type of quail. You should get some - they are wonderful!!! And the amount of eggs they lay are amazing.

I'd love to see an elk. My parents drove like 5 or 6 hours to PA to see the elk on my second cousin's property last year. Got some gorgeous pics though!

I do it a little differently. I wrap the bird in a towel so only the head is exposed and lay it on the cutting board. With the chef's knife, I quickly cut the head off, then hold it upside down to let it bleed out. Doesn't take long at all. I scald as you would with chickens, cut the wings...
I always pluck mine but I think next time I'll skin them. The way we've been cooking them, the skin is soggy anyway. But they are so YUMMY!!!!!
Canned/pickled 5 more pints of eggs Sunday - 24-26 eggs per jar. I just love them that way!!!! They are truly the perfect bird.
My buttons do that too! The males will pick up a small seed and make a different chirping sound and the females will take it right out of his mouth! They are very cute!

OH - and I meant to say blue BREASTED the other day - not blue faced. It was driving me crazy.
I use the quail cartons (the open ones) and put pine shavings in after I put the eggs in so they don't move so much. Then I put more shavings over the eggs and wrap the whole carton with bubble wrap or foam - whatever I have. The secret is to minimize the movement as much as possible.
