my recipe i read, called for 2 cups of syrup and 1/4 teaspoon of butter, cooked to 24 degrees above boiling point.
then i thought i messed up as it was more like taffy then butter, turns out it helps using an electric mixer to whip it to peanut butter texture. turned out great.
well made my first batch of maple butter the other day.
and wow, it tastes just like maple butter from the store (i used box elder/Manitoba maple) no sugar maple here. but it was really good.
got my first batch of syrup done a few days ago, about 2 cups and wow is it ever good this year, tastes like butterscotch mixed with maple (am using box elder/Manitoba maple what ever you guys prefer to call it) got about 20 some gallons of sap to cook down this weekend so far. and its flowing...
it feels like it should be sugaring weather here. think were just above freezing. but in a few days where back to like -25C (-13F) just got to keep on waiting.
went out and counted how many trees i have to tap this coming season. got about 52 Manitoba maple/box elder. now got to go flag them before i forget where each one is.
well finished my first boil yesterday. took i want to say maybe 7 hours from start to finish. got 3 cups of syrup.
the taste, was really very sweet, almost a caramel flavor? a bit smoky as well. (but that was due to the fire).

was going to start boiling, turns out all my milk jugs filled of sap froze solid last night. got to wait till they warm up enough to get any liquid out.
