Too many duck eggs!

I have 11 hens, and 5 point of lay pullets. I have 2 duck hens. I get 2 duck eggs every single day. I get 2-3 chicken eggs! Granted, my pullets are around 19 weeks and just getting old enough to start, but the older girls are 6-18 months and should be in their prime! If only I could get my family to like duck eggs as much as chicken eggs, I could get 3 more ducks and have no chickens and get just as many eggs as I am now. More if you count the fact that they are bigger, especially considering my best 2 layers out of my chickens at the moment are a silkie and a white leghorn (pullet, just started laying month ago and eggs are the same size as the silkies).
 
Hens slow when daylight decreases, they also stop when they molt. So this is why you are having a lack of chicken eggs. Use the duck eggs in pancakes, baked goods, scrambled eggs. The family will be none the wiser.

I don't like to eat the duck eggs plain, but I LOVE using them in my baking. The cupcakes last week were soooo rich and a gorgeous yellow I've never gotten from the store bought chicken eggs.
My family will eat the duck eggs though. I just eat a couple chicken eggs instead, since it's just our banty salmon Fave laying I just get small eggs
 
taken from my grandmother's 1950 cookbook: 300 ways to serve eggs

Fluffy egg nests
6 eggs
salt and pepper to taste
6 slices of hot toast

Seperate eggs leaving the yolk in the shell until ready to use.
Season whites with salt and pepper and beat until stiff enough for form sharp peaks.
heap onto toast and make a hollow in the center of each mound.
slip egg yolks into the hollow, season and bake at 350 until brown and yolks are firm.
Garnish with paprika and parsly if desired.

You may sprinkle grated cheese over eggs before baking, and/or add a slice of ham between the egg white mound and the toast.
This seems like it would work really well with duck eggs as much loft is in those whites.

Eggs New Orleans

2 1/2 C tomatoes
1/2 green pepper chopped
1 small onion chopped
1/2 C chopped celery
1 teaspoon sugar
3/4 teaspoon salt
1/8th teaspoon pepper
1 bay leaf
3/4 cup bread crumbs
4 eggs
1/2 cup grated cheddar cheese

Cook tomatoes, pepper onion, celery sugar, bay leaf and seasonings together for 10 minutes. Remove bay leaf, add bread crumbs and place in a casserole dish. break eggs on top, sprinkle with salt and pepper and cover with the cheese. bake at 350 for 15-20 minutes until eggs are firm and cheese has melted.

Eggs Benedict is always good. Make it into "Eggs Robin Hood" by adding slices or broiled tomato between the ham and the egg.

Eggs Doremus
4 tablespoons of butter
3 tablespoons of flour
3/4 teaspoon salt
1 teaspoon worchestershire sauce
2 cups milk
6 mushroom caps
6 tart shells (or one pie crust?)
1 1/2 cups minced chicken
6 eggs, poached

make a white sauce of 3 tablespoons of butter, the flour, salt, worcestershire sauce and milk.
brown mushrooms in 1 tablespoon of butter
fill shells (or pie crust) with hot minced chicken.
place eggs on top of chicken, top with mushrooms and serve with the sauce.

Toast, mashed potatoes or rice may be used in place of pie or tart shells. Can also use diced ham instead of chicken.


Egg Noodles

2 egg
2/4 teaspoon salt
1 1/3 cup of flour

Beat egg slightly
add salt and enough flour to make a stiff dough
knead well, let stand covered 1/2 hour
Roll out paper thin, spread on cloth to dry, must not be sticky or brittle.
Roll into rectangle and slice across roll into fine strips.
spread out to dry thoroughly.
when ready to use drop in boiling salted water and cook until done, about 10 minutes.


Just a few more ideas to get through those eggs.

I too wish I had more female ducks. My one girl duck gives us an egg every single day and has done so since the day she started laying a few months ago. My chickens, not so reliable. I have 23 hens and at the most we've gotten 19 eggs in a day. Usually it's anywhere from 12-15. I'm wishing I had more female ducks and fewer chickens.
My boys love the duck eggs and actually fight to see who gets it!

Wow I cant believe your family doesnt like duck eggs. You sure it isnt just the stigma of it? My wife and I are new to duck eggs, but they are soooo good cooked anyway. I love the thick rich yolks... delicious! If I were you Id try faking them out by putting them in the chicken egg carton and not telling them they are from ducks, I bet they love em that way!
