What is the difference between butterscotch and caramel? How do you make butterscotch?

The biggest difference is that caramel is made from white sugar and butterscotch is made with brown sugar.

Beyond that though, for caramel sauce, I melt and cook the white sugar to the correct (hopefully) temperature, take it off the heat, and then add butter and cream to finish.

For butterscotch sauce you can combine the brown sugar, butter, and cream right away and cook them all together in the pan for like 5 minutes and you are done. The risk of over or undercooking is much lower when you are making butterscotch versus caramel, IMO.

And when I say "IMO" what I really mean is that when I tried to make homemade caramel sauce for the first time last month, it took me SIX consecutive tries to get it right. :oops: But butterscotch sauce has never failed me!!!
 
Thx! I hate when I click a link on my phone and then I can’t get back here without closing down the page and reloading the app! Dumb thing wouldn’t let me leave lol. I’ve actually tried using both white and brown sugar. I wasn’t doing it right, but the sauce was still yummy lol.
