Have you tried potatoes like this? Sweet or red or Idaho. I like the roasted sweet taters. After cooking, toss with a couple tablespoons of apple cider vinegar instead of salt for seasoning. You won't taste the vinegar, but the flavor will pop.Roasted broccoli florets are one of my favorites. Toss them in a little olive oil with a pinch or two of course salt, pepper, and parmesan cheese... Roast them on a cookie sheet until slightly crisp.... Delish!
We do a veggie roast with mushrooms, potatoes, carrots, broccoli, brussel sprouts or cauliflower and what ever else. Olive oil, lard, butter or schmaltz is wonderful on this.
