We were actually out of cumin the other night when we made white chili.....substituted coriander and of course the leftover turkey already had some spices and it turned out really good!!! We also added our garden pickled jalapeñosI will use cumin in very small amounts if a recipe calls for it. I just don't like the flavor profile. I don't care much for chili either. Maybe that's why...![]()

False.Do you not like chili? Cumin is what makes it taste like chili.
This maybe hard to believe, but I have never made a roux...Although..... cumin does make an appearance in my roux for clam chowder.

what is this "5" you speak of?I use cumin when it is called for in a recipe (such as carnitas), but it's gotta be a very minor accent, not overpowering. I know too many people that abuse cumin. The smell alone! Blech.
