Gotcha. When I worked at the bakery many years ago, we used a very similar recipe with delicious results. You chill first before rolling out?
Yes, it gives the dough time for the moisture to spread more evenly through the dough. It makes it possible to use slightly less water which in turn makes a flakier crust. Another neat trick is to roll out the dough while it is inside a very large plastic bag. It works really well and prevents a crust that is on the dry side from cracking while rolling it out.

I also cheated and got a marble rolling pin which because of its weight requires less effort when rolling out the dough.

Calm down! Calm down! I wasnt serious. I should be able to visit sometimes. Just don't know what my new schedule will look like. I'm being jerry Seinfeld as I type this.
