I think I might be able to understand these type eggs aren't sold up north...north us...but the north is a little weird. Those people choose to live where they have to freeze all the time. That's not normal. But you middle states...come on...go Google or something and get the address to your nearest Asian grocery store and check.
I wonder if it depends on the market. If the people who buy Balut want already cooked that’s what you’d supply. If they want fresh — ew — but as a market you’d offer fresh.
BTW there are a few Asian markets about 45 min drive from me. And a couple of Indian markets too.
