I very much prefer eating elk, seafood (like, ANY and ALL - yum), and would love to raise my own meat birds. That's a project for next season.

I've only had elk summer sausage. It was delish but I'm sure it was cut with pork of some kind for fat. Still better than most summer sausages I've had. I also got bison summer sausage from the same place and it was even better. Darn! Now I'm going to have to try to figure out where I got that from!!! Hubs and I found it at a roadside farmers market traveling through Arkansas but we'd passed the farm where the elk and bison were raised just before we got to the market. Still I can't remember for the life of me what it was called though. Ugh!! This sounds like a perfect project for 1 AM... :th

I think just me. I'm pretty sure you can't have a gator in Texas with out special permission.
