I don't know..I've never measured the temp of the grease before.
I just wing it.

I don't measure temp either. I honestly just cook it on my biggest burner keeping my fire just over medium setting for that burner. I have NO idea the "right" way to do it, i just figured out how to do it on my stove after a few fails where I had my fire too low and my flour would stick and then fire too high and outside would burn. It was just trial and error and whose to say I won't screw it up next time. I don't cook if enough to be an expert by any means.
