No wonder you love them. I am intrigued by the crust... it looks like something I could make... Is lard a requirement...? or do you know. Or could I use butter. Lard here in the states has preservatives in it... Though I might be able to find it in the ethnic section of the store.

I’ve never known it made with any other fat, though whether that’s a taste thing or affects the pastry I wouldn’t know :confused:
 
I do believe I will try this. It would make a stunning and delicious addition to our Christmas brunch. Now I’ve got to trot off to pick up some pork trotters! :gig Thanks, @Pork Pie.
I have three or four packs of them. With the intention of making Pickled pigs feet... But I may sacrifice a package for bone broth. I figured If the pigs feet come out awful I will just use them for bone broth any way.

I love love love pickled pigs feet though.

Would you recommend an onion chutney or a fruity chutney? Both sound good to me, but for some reason I’m leaning toward an apple chutney. Or Onion Jam... works great with pork... I have a couple of small bags waiting to be turned into onion jam right now.
