Deb, how did your Christmas dinner turn out?
really well I pulled out all the stops.... Folding trays were set with fine paper plates With Luxurious paper towel Napkins and plastic cups.

I left a 50 dollar prime rib out because I thought it was a bag of cans it sat on the floor for about five days..... I opened the bag and said OH iF yoU see Kay tell her I love her...

So I rinsed and soaked it in lemon juice for about an hour... It was smelling alot better with I dried it and put it in the refrigerator to firm up. It was so tender when I put it in the pot to chill that my fingers almost pierced the meat.

After over night in the refrigerator It was firm enough to handle... I decided to cook it then which was about four or five days before Christmas. I pierced it all over and poked in Garlic Then Salted and peppered it and cooked it normally. 500 degrees for the first fifteen minutes then down to 325 degrees for 20 minutes per pound... for well done. It came out medium... Probably because It was very cold when i started cooking.

I sliced it up after it rested and gave it a taste test... Too much salt Other than that it was suculent and tender with no off putting flavors. Even the fat was good. I sliced it on the serving platter and laid the slices down as they fell... Then covered the platter with heavy duty foil and off it went to the freezer in the garage.

Brought it out the night before Christmas to thaw and Christmas dinner was Pretty Danged good. I took each slice out and pan seared it to warm it through and finish the cooking. Mom likes well done. Even after cooking it well done you could still cut it with a fork.

I made gravy before I started cooking the meat... Using the fat drippings Came out awesome. Then I realized I forgot a vegitable so Opened a can of peas and poured the gravy over the room temperature peas to warm them up... Then stirred some horse radish and sour cream together and put a dollup on the other side of the plate.

my son doesnt like beef and he ate most of his... Mom chowed down and raved...

I was able to eat about half a slice... and shared some gristly bits with the dog... By the time dinner was over that dog passed out. eyes all watery with all the goodness to be had. I think we all indulged our Dear Brandy on Christmas.

Sent mom home with a full slice the rest of the peas and a bunch of gravy... Left overs for us are the Ribs. All wrapped in foil.

I suspect doggo will get those as well... We will see.
