Am I the only one not understanding what actually happened here? Prime rib that was left out for 5 days, then soaking it for an hour made it smell a lot better? What????:eek: Surely I’m missing something. Please help me!

First and foremost I learned about aged meat from my dad. And how to deal with accidental aging. Growing up on the farm they wasted nothing. Sharecropping is hard work...

Fast forward to when we moved here in 67 We bought a half a beef... Big old chest freezer to fill. Packages and packages went into the freezer. About four to five days later mom noticed big green flies and she tracked down the source. A package of Porterhouse steaks left behind the kitchen door. Wrapped up so the flies couldn't get in but Oh they so wanted to.

Dad unwrapped the meat and washed the steaks off then dried them and wrapped them in fresh paper... and put them in the refrigerator. WE ate steaks that were incredibly tender and Juicy. Oh Yumm. Even well done...

So Yep I left the prime rib out out.... It only had a little bit of Odor... another day it would have been only good for dog food. In this case I was not going to waste a fifty dollar piece of meat just out of my own stupidity. So I rinsed off the slime... yep slime. And the lemon juice added to the water was only to help with the odor.

I rinsed the lemon water off and dried the meat and placed it in its roasting pan sitting on its rib bones Covered it with cellophane and refrigerated it. The next day I cooked it as usual. And the acid test was tasting it. I tasted it and it was very good. So I froze it.... If I was going to get sick from it I would be sick by Christmas...

All good. And yes life in this family can tinge on the bizarre.
