You'll get faster. I can do a single roo from catching to plucked and cleaned and in the fridge in under 20 min now.
 
For me, the process became easier after the killing, as the "dead chicken" starts to look like "fresh poultry".

You're right. There is a moment when the anxiety and guilt subsides and all that's left is the job at hand. I always remind myself that this soon-to-be meal was raised with respect and care; one less chicken raised on a commercial farm.
 
So, I gave one of the smaller of the roos to my BF's mom, told her to roast it low & slow. She called just raving about how good it was. Said she hadn't had a chicken that good in over 30 years. She just turned 80, and was raised on a farm with the old DP birds. Now she said she'll never buy another store chicken, and wants me to raise her Thanksgiving turkey. Oh no, what have I gotten myself into.
