Roos can and will "do their job" any time whether fertile or not. They need a certain # of daylight hours and the correct type of light to have the eggs be fertile though.
Did you see the embryo formed in the eggs when you candled them ?
 
I'd say candling obsessively and having no clue the humidity inside your bator did it. Hubidity is a very important part, especially in lockdown. When you said you didn't know how to put water in it that leads me to beleive they dried out. I think you need to learn more about your incubator and how to use it properly. You should also read about humidity and tempeture. Temp is very important, but humidity is also very important, especialy in game bird eggs. Even if you see an embryo it may have quit on you. Was it moving? Or has your humidity issues either drowned them or dried them out. Are you sure you have no idea what the humidity is? Are you using those crappy thermometers that came with the bator? How often do you turn the eggs?
