Welcome to BYC, Angela. Roosters are individuals, so its hard to say what breed will be the most gentle.
Also, bare in mind that you may have to establish that you are the boss. Most of my rooosters have challenged me at some point, but by putting them in their place quickly, but not cruelly, I've established myself as the flock leader.

Hello everybody, thank you for welcoming me into the flock!
From my handle, you can tell that I have 3 cats and 2 acres but the 1 Hen is my 6 year old grandson... Hen! It's Hebrew and means Yahs favor...he is my darling Hen šŸ’—
I have a back yard flock of 16 that I am contemplating getting a rooster for. I'm considering my options on which breed. He will have to be sweet, that's my number 1 concern or he'll be dinner. I have 5 sexlinks, 3 Isa browns, 2 Sapphire skies, 2 Black astralorps, a leghorn, Brahma, buff orpington and olive egger. I'd like to sell their fertile eggs for backyard mix hatching eggs, I sell their eggs now for eating and have gotten request for hatching eggs too.
I have a shed type coop up by my house and at the back of my property, I have 3 cattle panel coops that I'm turning into a breeding station for raising American Bresse for dual purpose. I just purchased 12 hatching eggs from quail 2020 they have green fire farms stock from 2017. I'm so excited to start on this journey. My incubator is running and getting ready for their arrival!!
Since I'll be breeding them, I wondered if having one of the American bresse roosters in with them as a backup for my breeding program would be better than a heritage breed for my mixed flock as I was considering a buff orpington, leghorn or black astralorp...I'm leaning towards buff orpington because I hear they're pretty calm. I'm not sure if the other breeds temperament especially American Bresse since they're new to me. Of my hens I only have issues with the Brahma and 1 of the sapphire skies. I've had to pin them down several times.. I can't imagine what the roos would be like!

Often I don’t respond to the newcomers but this activated my brain. 1 hen alone with 3 cats made me curious.
My situation was the other way around this morning, and many more lately.

A strange cats comes to visit our chickens and loves to eat from the chicken feed (chick crumble)

I would go for the friendliest rooster that isn't too loud. More important than the looks. Mixing up the gene pool is always good for longevity.
I don't know much about normal sized and large breeds.

I loved your intro!

I was just in one of my state poultry groups on Facebook and there were a plethora of adult roosters posted for probably free, but you'd have to message to find out. I think most know not to keep or give away mean roosters and a couple I saw were actually so sad to get rid of theirs as they were so friendly.

If you can find one that's over 7-8 months old, it's probably gone through its hormone stage by then, so chances are if they are nice at that age or older, they'll remain that way.

Loved your intro, i will tell my grandson (18) that he is my Hen and see what he says! :lau As for your questions, sorry I can't help you, I don't know eniugh about the breeds you listed. I agree with the others, get the most respectful rooster you can find, to maintain peace in the flock and make sure your chicken journey is joyful for you!
