One of my two blue ( standard ) Cochins has a lot more wattle development and it’s pretty red. This if my first time having cochins, so I’m not sure what is a dealbreaker or what.

Tough call. I have a splash pullet who I was convinced was a male until we hit 13-14 weeks old. She had bright red wattles, not quite as large as yours currently. Her comb is only now coming in and she's almost 5 months old now, I think.
