This sounds like you are witnessing his air sac fully inflated. If you catch him and fpat on it with the flat of your hand you will here a drumming sound. His beast is father back and will feel firm to you.

I can never catch him, I will have to get him while he is roosting. Is the air sac how makes that funny noise when he is strutting? I could never tell if that was coming from internally or not. I think I need a turkey anatomy lesson.

The air sac is how a tom "drums" while he is strutting. His air sac is likely to be deflated while he is roosting.
 
Googled turkey anatomy and their tiny muscled wings always crack me up. Amazing they can fly.

Regarding the dog thing, the turkeys never were really around the dogs. Once my aggressive dog did lunge at their brooder and scared them all (he was on leash) but they never had dogs walking by or shown them to be ok. It's ok, this group probably won't be free ranging much since they don't seem to fear anything. Going to build them a large secure pen anyway.

Post pictures of your turkey pen when it's done. I would love to see it!

Actually, I would like to see everybody's turkey runs, for those of you that confine your turkeys long term. I'm collecting ideas for the future. What I have now isn't all that great. I'm forced to free range them because locking them in it other than at night just wouldn't work.

It looks interesting, R2Elk, and I might like to experiment with that. But I thought of a bunch of questions that Im not sure where the best place to ask them is. I think I'll PM them to you, and you can let me know if you want them in the comments section of your article or not.
 
R2elk....so glad you posted that method! I remember being blown away by it the first time you described it to us. Would dog poop work....got my share of that....
Any non-composted "manure" will work. That method should work great for you since you really don't get the terrible sub zero temperatures that some of us get.
