A cool wild hog video in Texas

ok so say on one of the 200 lb hogs we got about 90 lbs useable meat......the smaller ones about 75 lbs we got about 30 lbs useable meat.......from what I have experienced we get about 1/2 of the total weight in useable meat for us. It can be messy and gorey and our processor charges extra for skinning and gutting so we have to do that ourselves which is soooooo totally gross and nasty.

A 150lb hog will yield a lot of meat. Don't know exactly how much...never weighed the finished product. 2 years ago we trapped some hogs that had been tearing up the corn fields at the prison. One big boar weighed 370lbs. 1 smoked headquarter off that big boy fed 20 people in the parking lot of the OU/TX game.

Some people say the big greasy boars ain't no good to eat...too rank, they say. I found ways to prepare them where they as tasty and tender as a 50lb sow. All in the prep work.

It's lean stuff too. When I get one made into sausage, I gotta grease the skillet to keep from burnin the meat.

It's for sure as organic of a farm critter as you can get!
 
There just seems to be something missing. I mean, look what they are doing with the over population of Canada Geese:

In Oklahoma, we have the Sportsmen Against Hunger organization. They accept wild game from donors, and it gets distributed thru other charities. I donated 2 of 5 deer last year, including a few hogs. Seems I read where in Oklahoma alone, there was over 450,000lbs of wild game donated, resulting in almost 2 million meals that were provided. Not too bad!

Most states have a similar program. I found out about mine thru my local meat processor.

They can be pretty dangerous, especially if injured,.... maybe thats why?

They leave gates open, let cows out. Throw trash on the ground. Most will shoot deer without permission. It is just a headace to babysit the hunters.

We would have people ask for the meat, so we would shoot them and field dress them and call the people to come get them and most of them didn't want to have to skin them. DH would offer to teach them how but they would decline. He would clean them for single women. Then we had one single mom get mad because we just gave her the hog in garbage bags in a cooler instead of cut and wrapped. Sorry, if I go to that expense and trouble I am putting it in my freezer.

Depending what we were going to use the meat for was what determined the size hog we would shoot. For BBQ we tried to get one about 75 to 100lbs. Dressed out to about 50 or so lbs. We generally only grilled hams, backstrap, tenderloins and ribs. We would save the front shoulders for sausage. Now for a hog for sausage we tried to get a 400+lb sow. that was about 275lbs of boned meat. We mixed with deer and fat and seasonings from meat market. Grind, grind and grind some more. Then either put in casings or use for patties. We would also sometimes leave it unseasoned and just use the ground pork. I would put it in freezer bags and then wrap in freezer paper. We had 3 freezers.

I think you must have had boar. If you soak it in a cooler with ice water ,changing water daily for 3 days, it won't have that gamey taste. I just prefer sows.
 
It is a sad phenomenon .. lots of free food for the taking but people either:

don't wanna put out the effort
complain because it's not store bought or ready-made
don't like the taste as well as store bought
think it's "dirty"
bla bla bla

Government agencies have become so regulated that most times they won't touch wild game (or home grown eggs) to feed the homeless/hungry ...

Pathetic... imo. It's up to private organizations like Sportsmen Against Hunger etc ... and they can only do so much.

What would these folks do if they ever HAD to hunt or scavenge for their food .. the grocery store shelves will last about 24 hours...
