Depending what we were going to use the meat for was what determined the size hog we would shoot. For BBQ we tried to get one about 75 to 100lbs. Dressed out to about 50 or so lbs. We generally only grilled hams, backstrap, tenderloins and ribs. We would save the front shoulders for sausage. Now for a hog for sausage we tried to get a 400+lb sow. that was about 275lbs of boned meat. We mixed with deer and fat and seasonings from meat market. Grind, grind and grind some more. Then either put in casings or use for patties. We would also sometimes leave it unseasoned and just use the ground pork. I would put it in freezer bags and then wrap in freezer paper. We had 3 freezers.

I am almost embarrassed to share this but when I was single with 3 kids to feed I called the sheriffs dept and asked them if I could have any deer killed by car accident. I did have a trooper and a deputy bring me deer. There was nothing wrong with it besides broken legs. I also recieved one that a poacher spotlighting from the road had shot. Already field dressed. I taught myself to skin deer. Such a blessing.

Kristy, I absolutely taught myself how. I just kept thinking, who is gonna see it and I do the cooking. Just go for it trial and error. When you are doing sausage, keep a skillet handy and fry a patty to try until you get it to your preferences. You can do it!

i am sure I can but I have this weird fear that i will somehow ruin the meat
 
Keep it cold is key, work in small batches. I would sometime stick the bowl of meat in the freezer until just starting to freeze and then refregerate until it was time to do it. Don't be skeered!
