As the previous poster pointed out is stands for an A & M University in Texas. There are several Agricultural & Mechanical colleges in America so I think most on this side of the pond are used to hearing it. The reason it is attached to the white birds people have come to know as texas A & M s is because the researcher who created that color type did so at that university. The birds were selectively bred to produce more meat per carcass or somesuch goal. A&Ms are not a true white bird and possess recessive pharaoh genes. Although it is hard to find birds that are actually related to that original group over the years any white coturnix with a discolored spot on its head or back is no referred to as an A & M. There is also a common myth that A & M are white meat birds, this is not true.Please pardon my ignorance, but what does A& M stand for?? Thanks, Jo
