a mechanical plucker can toughen meat?

I would have to think that is balony. Even if it did toughen the meat a little, I would take that as the trade-off of using a automatic picker. 100 birds by hand, wow! I sure don't have that kind of patience. Hats off to that for sure.
 
Seems like if it has any effect at all, it would actually help tenderize it a little, all that bouncing around and getting hit by the plucker fingers might help start breaking the tissue down a little.

I used my whizbang two Saturdays ago to do my meat birds and it would only tenderize the meat not toughen it. I was doing 2-3 chickens at a time at about 30-60 seconds so that amount of time I highly doubt it would even have time to toughen the meat. But boy oh boy make sure the scald temp and amount of time is right or you end up with "ground" chicken.
