A question about my leghorns

So I have 19 leghorns - 12 of which are hens. They are 13 weeks and I read that they can start laying around 17 weeks. This is my plan - remember I am new at this so please point out to me what I am dong wrong (or right!). lol! We will kill our meat birds in October and my plan is to kill most of the LH roosters at the same time b/c there wouldn't be much point in keeping them around. I know that they are poor meat birds but they will be good for something I imagine. Then I will keep the hens for eggs. Winters get REALLY cold around here and I imagine I will have to insulate their coop. So, my questions:

~insulating the coop - any tips/advice?
~when do I begin giving layer's ration?
~should I keep a rooster or 2?

We used 1/4 inch thick Styrofoam cut to fit behind the walls. I didnt have to buy any a friend from work had a about 50 - 10 x 14 sheets laying around taking up space so he gave them to me. Always nice to have cool co-workers.

I started my girls on Layena at 17 to 18 weeks old.

Were only keeping important rare breed roosters and then only one. The orp roos will soon be in freezer.

I will have one spitzhauben one Ameraucana one Faverolle and one Black Jersey Giant roos,
