A question on hard boiled eggs

The method that always works for me, even with eggs I have just collected, is to carefully poke a small hole in the large end, into the air sac, then drop them into boiling water. Boil for 10 min, turn off heat, let sit for 15 min, then chill in ice water and peel. They come out of their shells easily. A bit of white may escape from the hole at first, but it hardens quickly. A push pin works well to poke the hole in the egg; gives enough control to not go too far.

I tried poking a hole in the air sac but this didn't seem to make a difference for me. I never tried ice water or baking soda. I usually just run cold tap water in there for awhile. I'l have to try the ice water bath and soda next time. Hey vinegar softens egg shells! Maybe I should add some vinegar to the water!

I have a friend that uses my fresh eggs for boiled every week. He uses the boil, salt, ice method but also claims that if you just crack the end of the egg and let some water seep in as you're peeling, the shell falls off. Never worked that way for me but might be because I'm a klutz
 
I love this site! Almost every time I go to post a question, someone else has already asked and received replies. The hard boiled egg peeling is one that has bothered me too.
