The method that always works for me, even with eggs I have just collected, is to carefully poke a small hole in the large end, into the air sac, then drop them into boiling water. Boil for 10 min, turn off heat, let sit for 15 min, then chill in ice water and peel. They come out of their shells easily. A bit of white may escape from the hole at first, but it hardens quickly. A push pin works well to poke the hole in the egg; gives enough control to not go too far.
