That is what my mom does with her pie dough, roll them up with cinnamon n sugar and bake them. Delicious!

At least you were not making pumpkin pie...Mom forgot the sugar and it was nasty LOL! Dad had to put three TB of sugar on his pumpkin pie. I don't think we let her forget that one!

So glad I read this thread earlier today. I made pie crust for two pies (we're having our family Thanksgiving get-together tomorrow evening), and I had some left over. So I rolled it out, brushed melted butter on it, sprinkled sugar and cinnamon. Then I rolled it up, cut it into pinwheel cookies and baked them. My husband's comment a few minutes ago - "These cookies are good!"
