Adding plaster of paris as a source of calcium into chicken feed?

No no please don't do that.

What i do when i run out of oyster shells is dig mussels out of my ponds and crush them with a sledge hammer and my flock loves the mussel meat too

No, I would go with crushed eggs shells, a little yogurt, oyster shells. When in doubt, no!
