This is probably something that has been re-hashed a thousand times already, but at the risk of being redundant (ya gotta live on the edge sometimes) here ya go...
Prop one end of the water dish up in the incubator. When you begin adding water you see that water only covers a portion of the bottom of the dish at the lowest point. As more water is added the water gets deeper at the lower end but also begins to cover more of the bottom of the dish causing a larger water surface to be presented to the air (more humidity).
This just hit me like a bolt of lightening...or it could've be the bean dip.
