Incubating and brooding are basically the same, though incubation will take around 17 days, give or take. A good quality feed is needed, like a 28% unmedicated turkey starter or 30% gamebird ration, though some people get away with lower protein. Keep your water away from the heat in the brooder or they'll just flop down in it and drown. You can also put in sanitized marbles or stones to keep them from drowning.
I've switched mine to fermented feeds and they definitely eat less. You can find info on that and most other quail questions with the search function; it's quite good on this site.
