Do I go right to laying pellets? Is there an in between feed? I stop starter at 8 weeks, right?

I think there is a grower finisher , then laying pellets

hang on. No layer until they are laying.

You have a choice. Keep them on starter or use starter/grower or grower. There is very little difference in those products, in most cases.
Pick any of them you wish, but no layer until the eggs appear.
