My chick starter says it's to be used until 18 to 20 weeks. (Purina). My chick grit doesn't say when to switch to regular grit. Would it also be 18 to 20 weeks? Also, are certain brands recommended for layer feed?

Ok. Mine are 15 weeks and I've still had them on chick grit. I assume it does no harm until this bag runs empty?You can switch to regular grit at around 10 weeks. They can handle the normal size at that age.
I've never feed layer feed and never will because it forces the birds to always consume extra calcium even when their bodies don't need it and most layer feeds only offer the bare minimum of protein.
Instead I feed Flock Raiser with containers of oyster shell on the side for free choice feeding.
