what I love about this forum is the diversity of people on it. I get the pickled pigs feet, but never heard of black vinegar, so I googled it. It sounds like it would be good. I will have to look for some, fat chance of finding anything "exotic" like that in my tiny redneck Texas town.

But Houston is only an hour away, just don't get down there much. Houston has a huge Asian population-that makes for some really good restuarants. YUM

Really stinky leftovers lunch in the microwave is baked fish. Pewie! I love baked fish, but cooking it still stinks.
 
Any Asian grocer should have black vinegar. Look for the bottle that costs 5-8 bucks. There are cheap black vinegars that runs 2-4 bucks that really aren't that great.

I've only watched my mom make the stuff, but the jist is that you take a package of pigs feet. Boil them for an hour in clean water, replace water boil again. Take twice boiled feet out and put into new pot with two bottles of vinegar, a small handful of rock sugar, about 1lb of peeled and thinly sliced ginger, and maybe 8 cups of water. Bring all to a boil for a few hours, shut off heat, let sit till the next day and boil again for an hour or so, repeat for a week, then you can eat. Pre boiled and peeled eggs can be added too. No refrigeration necessary, just boil before eating.
 
Kind of ironic that silkiechicken would be bragging about having Asian co-workers at dinner time. Seems like a hell of an occupational hazard to me...

It can't be that dangerous. Haven't eaten myself yet.

As for occupational hazard...that is where the language barrier can come into play. Yes, phenol is dangerous, and oh no, did you just weigh out that PFA without a face mask outside of the fume hood?
