Thanks everyone. DH had me put both in the incubator so we will see. Im getting up early tomorrow to see if I can catch her in the nest. If it truly is her Im so glad she finally decided to grace us with eggs.

Duck eggs bake up much nicer than chicken eggs. They give baked goods more loft. I like to use a flour/wheat flour/wheat germ mix in place of all-purpose flour which tends to make baked goods more dense. Using a duck egg in place of the chicken egg helps to alleviate that.

BTW, my Mom bought a grain mill a couple months ago and loves it! The flour is so much better! Even the special expensive whole wheat flour she bought would make tough and rubbery bread, but with her grain mill the bread is almost as fluffy as bread made with all-purpose flour!
