We can pick our patron saint, yes. I have several, so do my siblings, and family. Even our city has one (St. Patrick).

Orthodox can pick one based off similarity of name, or being inspired I think. I might go off name, except there is only one saint who has a name similar to mine, and it's my middle name. There's next to nothing on her. I'd likely read up on them to choose with prayer.
