all these eggs!!!

Throw them at the neighbors! :) Just kidding. Could always run an ad for free eggs in your local paper, I am sure you could rid of them that way.
 
This is what Iam doing with mine.

Pickled eggs
12 large eggs
1 1/2 cups white vinegar
1 1/2 cups water
1 Tbls pickling spice
1 clove garlic crushed
1 bay leaf
boil and peel eggs.
boil in med sauce pan vinegar, water, and pickling spice. Bring to a boil and add garlic and bay leaf.
Remove from heat, transfer eggs to jars, fill with vinegar mixture over eggs. seal and refridgerate 10 days before serving.
 
Angel food cake :) If you frost with 7 minute frosting it takes about 16 egg whites, and then you can make custard with the yolks :)

Angel food cakes freeze well too, plus they sell well.

Is there a reason why you can't sell eggs? A friend of mine has an egg route, she goes to some local offices and sells her eggs (picks some of mine up if she needs more too) She goes to insurance offices, banks, city hall, courthouse, sheriffs dept, places like that.
 
I just cracked open a bunch of eggs last night to freeze. Mix 2 eggs per baggie because most baking recipes call for 2 eggs and freeze for later baking use, feed to dogs and/or chickens cooked or (raw for the dogs), and you can make your self omelets or scrambled eggs. Our kids like to microwave eggs after thawed out and add a piece of cheese to top. It is pretty good if you don't over cook it :) They did this when they were pretty young....one of the first things they could cook themselves. All these ideas you can do with the mixed frozen eggs or fresh.

I know some people put an egg in each ice tray cube and then when frozen pop them out and put in a bag. That way you know each cube is an egg. I just put 2 mixed up in a baggie and freeze.


I always make angel food cake and pound cake. French toast and quiche is another favorite of mine.

Does this change the eggs in anyway? I have never heard of freezing raw eggs before.
 
I don't think you would notice in cooking or baking. I can't swear to it as this is the first time I tried myself and I have not used any yet. :) I hear of people doing this all the time though on this site. I am surprised someone has not commented sooner to you about your question. Can feed to dogs and chickens too though.
