Here's another way to use up your potatoes (I'd double it for your family -- you have more people in your house than I do) -- http://clutehomestead.blogspot.com/search/label/SOUPS. Also great with ham instead of bacon. And I've shredded some carrot before and threw it in -- kids can't even tell it's there.
