It keeps the rooster from pulling out your girls' saddle feather while mounting. Otherwise, your girls could end up with bald backs.

Sometimes hens will loose their saddle feathers or get gashes from roosters when they are bred. The saddles are just pieces of heavy material with elastic that fit around a hen's wings. It covers their backs and protects them. They can be pretty stylish.
