An advice on humidity issue is required for the HHD 56 Egg Incubator YZ-56A (Clear Top)

The humidity is showing around 25% and when the lid is opened, it increases to around 30% and more and then goes back to 25% after closing the lid. I have filled up both the water channels with no improvement in the humidity reading.

Also, the humidity display is blinking and not stationary like the temperature reading. How to solve this?

How can I increase the humidity for hatching period?
 
I wouldn't rely on the incubator reading for either the humidity or temperature.
Here's a sensor that will do both and is extremely accurate (if you have a smart phone).

Surface area rather than volume is what increases humidity. Try pieces of sponge in the channels to increase it.

Just bouncing between 25 and 30% regardless of what you do tells me the readings are wrong.
Where are you located? Do you know what the ambient humidity is where you are?
 
Thanks a lot for your generous response. The device you recommended cannot be shipped to my country of residence. But I do have a Digital clock with a built in hygrometer. When I placed it inside the incubator it shows 90% humidity. Because, I live in Saudi Arabia and my house is centrally airconditioned so I don’t think the outside temperature might really matter.

For humidity, you can find a fairly reliable one from humidor websites.

However, if you don't want to be mistaken by sensors, get a pocket gram scale.
Measuring weight loss during incubation is the most accurate means of measuring the appropriate humidity for hatching eggs. There should be about 13% weight loss during incubation if they have lost enough weight.

I'm sorry but I can't say because neither state what the accuracy range is.
You want something with a temperature accuracy range under 0.8C.
Within +-5% is close enough.
You can't get any Thermoworks products there?
You can calibrate most thermometers. I'd still go with a scale to track weight loss rather than worry about precise humidity. The weight loss method is more accurate since humidity isn't a set number because all eggs vary in porosity.
