PC, if I recall you are suddenly single and having to cook for yourself. I learned along time ago to cook in bulk on a Sunday for the week, then package the meals up and freeze them for later in the week for dinners and brown bag lunches. Right now I have several frozen boneless/skinless chicken breasts in the freezer, along with two gallons of homemade chili, and bean soup made with chicken instead of ham. You can make rice ahead of time and freeze it. And don't forget to use a crockpot/slow cooker. You can put the stuff in it in the morning, set it on low and when you come home at night dinner is ready and waiting, not to mention the house smells really good too!.
And homemade bread is great as well, there are recipes out there for it that are healthy, low carb, and still taste good.
Congrats on the weight loss as well, I am working on it too, and I am down to 239 LBS. Only 49 lbs. more to go!
