I was so busy during the holidays that I didn't have a chance to enter, and somehow lost track of the contest. I couldn't even find it when I searched for "contests". I'm curious who won because there were some great entries!

The restaurant I worked for in High school (at the golf course) made mini-cheesecakes as one of their desserts. She would make a double batch and keep them in the freezer - start the night with 6 and pulling more out to defrost as they were used up. That's where I got the recipe from. The Personal Pineapple Upside down cakes would have been a huge hit back then, my grandparents would have been there every night for dessert - it was grandpa's favorite.
When DH and I were doing Weight Watchers a few years ago, I made Whole wheat Bread all the time. 2 points per slice - check; whole grains - check; and tasted wonderful. DH lost over 70 pounds (2012 to 2013). He has since gained it all back, but we have started eating healthy ... again.
I love upside down cake! I need to try in in the jumbo muffin pan. I like using peaches and I have some canned peaches!

My maternal grandmother's upside down cake recipe calls for canned apricots.I once made a fresh pear upside down cake, it was pretty good, but never thought about peaches. Thanks for the tip.
