Plain Muffins
INGREDIENTS
2 cups white flour
1 tablespoon baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg, slightly beaten
1 cup milk
1/4 cup melted butter
PREPARATION
Preheat the oven to 375°F. Butter muffin pans. Mix the flour, baking powder, salt, and sugar in a large bowl. Add the egg, milk, and butter, stirring only enough to dampen the flour; the batter should not be smooth. Spoon into the muffin pans, filling each cup about two-thirds full. Bake for about 20 to 25 minutes each.
Blueberry Muffins.
Use 1/2 cup sugar. Reserve 1/4 cup of the flour, sprinkle it over 1 cup blueberries, and stir them into the batter last.
Pecan Muffins.
Use 1/4 cup sugar. Add 1/2 cup chopped pecans to the batter. After filling the cups, sprinkle with sugar, cinnamon, and more chopped nuts.
Whole-Wheat Muffins.
Use 3/4 cup whole-wheat flour and 1 cup white flour.
Date or Raisin Muffins.
Add 1/2 cup chopped pitted dates or 1/3 cup raisins to the batter.
Bacon Muffins.
Add 3 strips bacon, fried crisp and crumbled, to the batter.

DH took my car to work today (mine is AWD and his isn't) so I'm not going anywhere. I just got back from hiking the more than 1/2 mile, up hill to the bus stop to meet the kids and I am SO out of shape lol. My lack of motivation is rediculous lol

Try subbing out half a cup of bran for the flour in the plain recipe. Maybe try the whole wheat version toothats the problem Ma use to make a bran muffin to die for used egg and bran rest was the recipe on the bran box

- 1 1/4 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 cups Kellogg's® All-Bran® Original cereal
- 1 1/4 cups fat-free milk
- 1 egg
- 1/4 cup vegetable oil
1. Stir together flour, sugar, baking powder and salt. Set aside.
2. In large mixing bowl, combine KELLOGG'S ALL-BRAN cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.
3. Bake at 400° F about 20 minutes or until golden brown. Cool 10 minutes. Serve warm.
Note
VARIATION: For muffins with reduced calories, fat and cholesterol, use 2 tablespoons sugar, 2 tablespoons oil and substitute 2 egg whites for 1 egg.
VARIATION: For muffins with reduced fat and cholesterol, substitute 2 egg whites for 1 egg and 1/4 cup sweetened applesauce (or 2 oz. jar bananas baby food) for 1/4 cup vegetable oil. (Muffin texture may vary slightly from The Original All-Bran Muffins recipe.)
I know!I'd forgotten those muffins...always liked that recipe!
(Actually, I think that's the only reason to buy the bran cereal, lol.)
