Baking soda. It helps cut down the acidity. It works well in tomato sauces as well. Also, try adding just a touch of sugar to the kraut. It seems to make it a bit easier to digest.I have a question for our home bakers.
I love sauerkraut but it doesn't like me at all and gives me horrid gas pains and general GI upset. I prepare it with Bay leaf and a chive or two, does anyone have any idea how to tame this beast? I'm using the stuff from glass bottles should I just give home fermenting a shot?

I substituted sucralose for the brown sugar.

I substituted sucralose for the sugar and added 1/2 tsp baking soda. Without the baking soda, the sucralose substitution caused it to foam over. The baking soda cured that problem but the filling is now very dark instead of the expected caramel color. It is still very tasty.
My last over under endoscopy was negative and done within the last 6 months. I have never tried kimchi to know if I have issues there the smell I find off putting.does kimchi do the same thing?
I would suggest eating a smaller amount more often. Gas and bloating are supposed to be lowered with sour kraut and kimchi. If the opposite is happening, you likely have a bad mix of bacteria in your digestive tract. Do you have ulcer symptoms in general? Do you take an acid reducer? If so, you likely have an over load of H-pylori in your stomach. That causes nearly all ulcers and upper stomach issues.
Good news is if you get a Dr. that is under 35, you can get them to prescribe anti biotics to cure it.

Agreed I think i'll try the canned del monte variety and see how that goes the Libbey one just makes me so miserable but it tastes the best.Try making you own sour kraut then or a different brand. There might be something in the commercial version that does not agree with you.
