Any Home Bakers Here?

@R2elk I know you bake a lot of family favorites, but I came across a high altitude baking webpage yesterday and thought I'd share the link in case you want to check it out:

Someone has asked me to bake them a red velvet cake so I'm going to try her recipe this weekend. (Might make more of the frosting though to cover the top.)

At one mile high I have not had any issues with my recipes as far as baking goes. Boiling is a different matter and does require longer times. You are much higher than I am.

The cookbook that I gave you has my maternal grandmother's Red Velvet Cake recipe in it. She would frost hers with a marshmallow frosting but a cream cheese frosting is also excellent.

Question for anyone...the recipe calls for 1 Tablespoon of red food coloring. All I have on hand is red gel coloring. Will that work the same as the liquid food coloring?

It will work. Keep in mind that gel coloring is much more concentrated than liquid, so you won't need nearly as much
 
still debating on dinner roast, pizza, pork ribs ?????? making chocolate pudding with bananas

I have a young rooster stuffed and in the oven. Didn't have enough potatoes for mashed so pulled some beautiful Red Pontiacs from the garden. Also harvested a head of cabbage for cole slaw. All I need to do is wait for the chicken to get done so I can make some gravy for the stuffing and mashed potatoes.

When I sell a turkey, I include a soup sock and a pack of my rub along with my cooking instructions... I prepared them after my cousin bought a heritage bird and cooked it like a BBW only to be very disappointed. I brine store bought BBWs as they have no flavor, mine on the other hand do.

Here's the paper they get with their turkey....
