Any Home Bakers Here?

Do you know what your elevation is now? If you're over 5,000 feet, I'd guess that's the issue. When we moved to WY from FL, I had to re-learn some of my favorite recipes due to elevation and it's a lot more dry here.

A couple of things that have helped me:
-Sometimes adding an extra egg yolk can help with dryness (egg whites are drying). If your recipe calls for 2 eggs, use 2 whole eggs plus 1 egg yolk.
-Reduce sugar by just a bit (remove a Tablespoon from a cup of sugar)
-Bread and cakes take a bit more flour so they don't sink in the middle
-Reduce the baking time, check for doneness about 5-10 minutes earlier than the recipe states

Some of my old stand-by recipes just plain won't work here so I've had to find high altitude specific recipes.

Thankyou for your reply. I'd not even considered elevation! we are much higher here than we were, roughly 1000ft. But we are much much dryer too and that's also something I'd not considered!! I just blamed the oven, or the ingredients!

I am planning to buy a new oven soon anyway, maybe that might help a little? My current one is one that we inherited with the house.

I miss my old cakes!

1000ft should not be a problem for baking.

New ovens are very worth it!
 
Penny, Our bodies tell us ...when we need to sleep-in. We all do
it. It is cloudy, gloomy and we just had rain. Weather wants to
put you to sleep...here. I baked a loaf of No Knead White Bread.
I find No Knead is quick and takes less time...especially when you
leave it overnight.

I agree, it's easier to handle after sitting overnight.

(Agree with you on gloomy weather sleep too :lol:)
