Any Home Bakers Here?

Does anyone have a good scalloped potato recipe? Mom used to make hers with lots of cheese, but I don't know the rest of it. Online recipes are confusing me.

I used this one but made my own cream of mushroom soup using the cream of anything

Scalloped Potatoes with Ham

INGREDIENTS:

  • 1 pound fully cooked ham slice, 1/2-inch thick
  • 5 cup thinly sliced potatoes
  • 1 can (10 1/2 ounces) cream of mushroom soup or cream of celery soup
  • 1/4 cup milk
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • dash pepper
  • 2 tablespoons butter
  • 1 cup shredded Cheddar cheese, optional
PREPARATION:

Directions for scalloped potatoes
Cut ham in bite-size cubes. Place half of the potatoes in a greased, shallow, 2-quart baking dish. Cover with ham pieces. Top with remaining potatoes. Combine soup with milk, onion, green bell pepper, and ground black pepper; pour over potatoes. Dot with butter. Cover with foil and bake at 350° for 1 hour. Remove covering; bake 30 to 45 minutes longer, or until potatoes are done. If desired, sprinkle shredded Cheddar cheese over the top of scalloped potatoes the last 15 minutes of baking time.
Scalloped potatoes serves 6.
 
Thanks for the recipes everyone! I went ahead and made up my own version...surprisingly it was a lot like @R2elk's. I made up a white sauce and seasoned it with salt, pepper and herbs de Provence. Made a mix of cheddar, Swiss and Monterey Jack cheese. Layered all that with thin sliced potatoes.

Tasted good and DH liked it!
 
I can’t remember the last time I did this, but it does get you out of a tight situation!

Brown sugar recipe
1 C white sugar
1 Tb molasses

Combine the sugar and molasses in a mixing bowl and then mix with a whisk beater attachment (a fork will work as well, it just might take a little longer) until it combines. Initially, it won't look like it's going to work, but it will. When it is light and fluffy, it is done. If there are a few little spots of molasses in the mix in the end, that is fine. Store in an airtight container.
 
Mine doesn’t get to the bottom either and the paddle with the rubber doesn’t scrape real well. I loved it at first. It has had an oil leak in it also which hubby worked on and got stopped. I ordered it factory direct. I just bought a new hand mixer. I mostly use to mash potatoes. It has heavy plastic beaters. Not sure I like it. It is almost to powerful. I think it would work great for cake batters.
I use a stainless steel potato masher. It works fine. Aria

I will be making scalloped potatoes after I bake the ham for New Years.

My Mom did not have a recipe. She threw stuff together and it was always good!
