Any Home Bakers Here?

Today I made bread.
I made a sourdough round loaf this morning that is now resting until tomorrow. (Never used a starter before but it's rising)
I made banana bread to use up ripe bananas. Half of it has disappeared... 🤔
And I've made a no yeast round bread for supper.
Nice day of baking!
 
I love baking bread here is a recipe that I adapted from a King Arthur Flour - Oatmeal bread recipe! I make this in my bread machine, but you can totally bake it in the oven! It features Sprouted wheat, which is full of vitamins and minerals and easier to digest! I actually gave up bread for a couple of years and still only eat it occasionally, but this is my favorite homemade loaf!

Sprouted Wheat Oatmeal Bread
1c lukewarm water
1/3c lukewarm milk
57g/4Tbsp butter
28g/2Tbsp brown sugar
43g/2Tbsp honey
99g/1cup rolled oats
50g/1/2cup rolled oats, ground; or oat flour
2 Tbsp. Instant Milk (optional)
2 tsp instant yeast
10g/1Tbsp Vital Wheat Gluten
1 1/2 tsp salt
237g/2cups Unbleached Bread Flour
78g/1/2c + 2Tbsp Sprouted Wheat Flour (KAF)

Add ingredients in the order recommended for your Bread Machine!
Baked in my Zojirushi Virtuoso on the Regular Wheat Course!

Always check your bread when kneading to see if it needs more water or flour!
Tip: I always add the cold milk to water which I have above a lukewarm temperature! Save's a step!
Sugar can probably be reduced! I have not done this yet, but plan on trying it!

It can be so hard to figure out what a study is all about when news stories can give the study a result it did not have.
Agreed! White flour and whole wheat flour aren't significantly different on the Harvard glycemic index. Speaking only about blood sugar, conventional thought that whole wheat bread is "better" can be misleading because unless the grain is whole, broken into large pieces or better yet sprouted it can still spike blood sugar. Once that starch is freed from the bran and the germ it's gonna burn! lol !

Sorry for the yada yada, I have suffered from blood sugar spikes and drops for most of my life. One of the very very worst offenders for me is oatmeal. Whole grain, lots of fiber, good for you, right? Within an hour I will be shaking and sweating. It's really frustrating. I envy those who can have a piece of toast or a bowl of cereal for breakfast! So why am I on a baking thread? Well I figured out I can eat baked goods later in the day and I'm fine!
