My mom's doughnut cutter has a removable center ring. So for filled donuts, she would remove the ring and cut rounds, then rise and fry as usual. You squirt the filing into the donut after it is done cooking with a syringe with a long tube. It is an art to get just enough in that it doesn't squirt out all over when you bite into it and yet get enough in there to get filling in almost every bite.
 
Ahhh Thank you @wyoDreamer just what i needed to know we actaully made a few bat donuts using a cookie cutter those would make great filled just not use too much huh

Thank you gave me the info I needed to try it I had a syringe from heaven know when it was in a kitchen drawer long nozel type put raspberry Jam in did not put mega amounts but it was fun to try.. Maybe get real brave make pudding next time
For filling doughnuts I use a canning ring for the cutter. You can buy a cupcake filling tip that works well. One of my favorite filling is bavarian cream, an easy recipe I have found calls for cream cheese, cool whip, and instant pudding.
