I don’t use a special dough recipe for cinnamon rolls. I did use brown sugar this time instead of regular in the dough. It didn’t have a big impact.
I was going to take the time to actually make one huge strip, but why? :th Four strips wrapped around each other was much easier. After it was almost done rising, I baked it at 350* for 25 minutes.

Spicy Sweet Potato Bites
I abuse the original recipe pretty much so we'll just go with how I like them...

2 large Sweet Potatoes, peeled and cut into 1" cubes (best you can)
2 TBS melted butter
1 tsp Chipolte chili powder (you can adjust based on your desire for heat)
1 tsp Cinnamon

1 pound bacon thick cut.
1/4 Cup Brown Sugar
Maple Syrup

Put potato chunks in a large bowl, add butter and spices and toss ensuring all are well coated. Let set for an hour or two occasionally tossing while waiting. Wrap each piece of spiced potato with bacon and secure with a toothpick. Place on a cookie sheet lines with parchment or a mat. It's a good idea to spray either.

Preheat oven to 350

Place bacon wrapped potatoes on the cookie sheet, sprinkle with the 1/4 Cup brown sugar. Bake 40 minutes until the bacon is crisp and the potatoes soft. Place the potatoes on serving platter and drizzle with warm maple syrup.
