If you're not tired of Gingerbread yet, I baked a GB cake today and it turned out quite tasty.
Gingerbread
- 1 cup melted shortening
- 1 cup molasses
- 1 cup light brown sugar
- 3 cups all-purpose flour
- 2 teaspoons cinnamon
- 2 teaspoons ginger
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1 1/3 cups boiling water
- 2 well-beaten eggs.
_________________________________
- Mix melted shortening, molasses, and brown sugar.
- Add all dry ingredients, sifted together, and mix well.
- Gradually add boiling water, stirring constantly.
- Fold in beaten eggs.
- Pour into a greased 13 x 9 1/2 x 2 inch pan.
- Bake at 375 for 40-45 minutes.
** I used a 10 x 10 x 2 inch corning ware dish and baked 42 minutes at 350.
It is soft, moist, delicious. But a real challenge to mix by hand.
